    Well wanna be honest. The food that did eventually end up at the table was a complete different tables orders. Its very conveniently located. But food was late. Waitstaff didn't seem to want to be there. Im a big tipper maybe they just didn't need the mula'

    We have yet to actually eat here but we have gone twice got to go orders. The food is always very yummy. Tastes like good quality Mexican food. Prices are good. All in all I am very happy with this place. Maybe one day we will actually eat inside.

    I was brought here by a friend who swears by the fajitas. I have to say, I was not disappointed. Unfortunately, I was driving so I didn't have a margarita, but they do serve them. We got the steak fajitas for 2. I think the "for 2" option is great. It saves you a few bucks and you don't have 14 plates all over the place. The meat was well cooked, it had great flavor and was tender. The sides were also equally as good. The rice was fluffy with good flavor, the guac was yummy and so was the salsa. I'll definitely be back.

    The food is ok.... Nothing to write home about. The restaurant is family own and the staff is pleasant. They charge you if you want a second bowl of chips Overall experience was fine

    I have never had an experience quite like I did when my family and I came here. The waitress was demeaning, disrespectful and flat out rude. NEVER COME HERE! The food is terrible anyway.

    I was excited to try this place with my 2 girlfriends because they had both been here before. Honestly nothing about this place is good. The service is horrible and the food just was not good and it is pricey too. I looked all over the menu for shrimp tacos and did not see them. When I asked my server if they had them she looked at me like I was crazy. SO I ordered the shrimp fajitas. The shrimp was so disappointing AND they charge you if you ask for more tortillas, so annoying!! I was so surprised my friends had already been there because this is definitely not worth another visit.

    The staff is always nice. Usuaully order the fajitas for two and half chicken / half steak. Sometimes the chicken enchiladas. They are pretty close, sometimes I wished that they delivered.

    Our family was anxious to try this new spot when it opened as we love good Mexican food and were hopeful that this close by establishment might just fit the bill. ***I know you are thinking it can't be very authentic with a Tex-Mex name like Las Fajitas but we realize this is suburbia and such names are expected. Our waitress was still unsure of the menu and the staff appeared overwhelmed. Service was extremely slow from drinks to even taking our order. We tried to be patient knowing it takes a while to get a new staff up and running. The place had a wait and we were hopeful that would be a good omen. No such luck. After we were finally able to order, our dinner for a party of five came in three waves. The first two dinners arrived and it was at least another five minutes before two more meals came. I was left waiting, with apologies for another 10 minutes for my meal to be served. After the messed up service the only thing to hope for was great food! No such luck!!! The food was sub par all around. My husband's fajita burrito was dry, cold and tasteless, another member of our party's cheese enchiladas were not even melted thru...the cheese was still cold and shredded inside??? Then there was my order, chili rellenos. Once my much anticipated rellenos arrived, they were mushy and lacked any freshness or flavor....frozen and microwaved perhaps? Uhgggg. Finally, our waitress brought us an unsolicited complimentary desert as an apology for the disconcerted delivery of dinner. Her actions were thoughtful but even the desert was disappointing. The best part of dinner was the margarita. They were okay but overpriced. Overall, I debated between one and two stars...I wanted to be more complimentary but the place gave me zero reason to rave. I guess I should mention the decor is warm and inviting. I know we won't be back. Maybe it was opening month jitters but our experience was pretty awful and our check well over $170.00 :-( No thanks!!!

    It's decent Mexican food. I've stopped in about 4 times this year and have never been served food I never finished. The service is friendly.

    Nice little mom and pop mexican place. Average wait staff. Cozy and tucked away. The menu wasn't large but that's just fine, since the selections were good. They made us a couple of very nice margaritas and the food was simple and good! We ordered the steak and eggs and though the steak came out too rare, it was remedied quickly. It was very good with eggs. The chorizo and eggs were very fresh. Service was polite and the food was made very quickly.

    It was just ok. Right off the freeway to great access but unfortunately probably won't go back. Was hoping for some good old fashioned Mexican food but it was not great and a little pricey. Hopefully it will improve in time. Nice owners and great service though!

    Carnitas tacos were okay. Cheese and chicken enchilada were terrible. I would not order them again. Service was fast though. Would not go out of my way to come here again.

    I've been in a couple of times recently and really have been pleasantly surprised at how good the food is here. Very casual, one dining room and a small outdoor patio that unfortunately gets a lot of I-25 road noise. The chips are warm and the salsa homemade, which is a great way to start the meal. Good soft chili rellenos and really delicious shrimp fajitas. They have a nice margarita and authentic horchada if you're not in the mood for alchohol. I will definitely keep them on our list for reliable good mexican food.

    Their huge burrito was huge and delicious (3 sauces, many meats, rice, and beans, and a diced fresh jalapeno). The jalapeno wouldn't normally come with it, but they added one in for me... Their salsa and chips were also great and the staff kept them both flowing nicely.

    Tasty neighborhood Mexican food joint. Their namesake fajitas, are incredible, especially the carnitas. I think I got like half a pig on my plate. You could easily share this dish with your date.

    We visited with our family on a Sat. night, and the place was pretty empty. I'm not sure why, the location is good, and the food was pretty tasty too! I'll share our pros and cons: Pros: The food was delicious, fresh, and the presentation was quite nice! The salsa served was homemade, and very flavorful. The kids meals were awesome too. Lots of choices, and the meals were tasty, and had generous portions=happy kiddos! The service was fast, and friendly, and food came right away. Cons: The server was waiting,and I quickly glanced at the menu and ordered a house margarita. I later look, and noticed it was made with "Montezuma" tequilla. I'm no liquor snob,but it just didn't taste good. I'll order the Jose marg next time, but surprised they had this on the menu---ick! I've never seen a Mexican restaurant serve this. Also, they had a sign up that you would be charged for extra chips and salsa. One word-cheap. Come on....folks don't really consume 10 baskets of chips. Don't cheap out...its not customer friendly. I think a little customer service fine tuning might increase the customers here, not have a basically empty restaurant on a Sat. night. Refill drinks, refill chips without having to re-order, check back in with the customers. The food is right on the money!

    The eternal quest for the best Mexican food continues. So on our way BACK to Taste of Mexico, we spotted this place and decided to give it a try. I judge by the rellenos and they were fine. And that's just it. Fine. Not great, certainly not bad. Just fine. House Margarita, fine. Husband's burrito, fine. Don't have much to add except there was a family eating who let their kids roam all over the restaurant. Loud, climbing on things...............NEVER understand why people think that's acceptable.

    Lived in San Diego for 5 years, know real Mexican. This is good, solid preparation, inexpensive. The best Mexican in the area, well worth a visit. The ambiance isn't outstanding, but then the best Mex in San Diego is where you would swear you were going to get shot. This ambiance is much better than that. :)

    The food is pretty good, and comes out quickly without tasting like it's been sitting around. I agree with other reviewers; you pretty much need to know what you want to order as the staff isn't too helpful with menu selections. Good location for those in Lone Tree, Castle Pines, and Castle Rock. It's better food and service than Taste of Mexico in the Village Shopping complex. If the owner Alberto who left a posting 11/2012 is reading this, you should offer unlimited chips and salsa. Have a manager ask parents who can't control their kids to please stop running around your establishment annoying other customers. Overall: A good neighborhood spot for good Mexican food.

    Finally a winner in a long-struggling location. This spot in the Safeway Center at Castle Pines Parkway and I-25, has been the kiss of death for several restaurants. With the opening of Las Fajitas a couple weeks ago, it appears the spell has been broken. Their menu is extensive, the food is delicious and the service is solid. We've been there twice so far and enjoyed it both times. The restaurant is not large so there's often a wait but locals seem OK with having to wait for a table because we're pleased to see them succeed and thus, remain in business. Also, their prices seem reasonable. Las Fajitas is a welcome addition to Castle Pines. Try them soon.

    Been back twice now....food/service still excellent, but the opening crowds have thinned...you'll likely get immediate seating or at worst a short wait. If this has been stopping you from going, you no longer have an excuse! Wonderful addition to the CP dining scene. Go!

    I've been disappointed with the Mexican restaurants in Parker. I finally tried Las Fajitas (easy to get to now that Hess goes through to I-25). Absolutely the best carnitas I've found in Colorado. The carnitas fajitas are the best! This will be my family's Mexican restaurant of choice from now on.

    I don't get it with the good reviews of this place. We went on a Tuesday night and we were the only ones in the restaurant. So you would think our service would be great. The server took our order, brought our food and drinks and asked us if everything was ok.... It was.... o.k., just... o.k. nothing more maybe something less. The chips and salsa are really not that good especially the clearly "out the bag" chips. Watch it trying to use the kids eat free coupon, I got mine in the mail that day! gave it to lady and it was expired. I said, "thats wierd, it came in the mail today" they won't give you the kids eat free on monday and tuesday without it and I suspect it's their little ploy to get people in and then tell them tuff luck. Maybe it was a misprint...I don't know but either way they didn't honor it. Too me, I hate when places are wierd with their coupons, especially if your the only one in the dining room, it's not like they can afford to be picky. Oh and it had just expired the day before. Besides the stupid coupon...food? blah. drinks? blah. service and atmosphere? very blah. No thanks... they are much better mexican restaurants I will gladly spend my money. WHEN is Castle Pines going to get a decent place to eat!!!?????

    This is a great Mexican restaurant and its even better that it is in Castle Pines! Great food and service. We have been there multiple times and love the place. Good real Mexican food is hard to find in Denver and this place is now our favorite. Try the carnitas tacos or the chille rellenos. We in Castle Pines are real happy to have this place here. Don't listen to the bad review for the hamburgers. They don't know what they are talking about.

    Enjoyed our experience for dinner. Very friendly staff, attentive and timely. Fajitas were fantastic! Lots of flavor, seasoning on steak was delicious and all the fixings were fresh. Prices were fair. We will go back for sure.

    This place had amazing salsa and chips! My enchiladas were amazing also!!! They were the spinach ones with the cream sauce---so good! The service was great and I will definitely be returning and letting friends and family know about this place!!!

    We were hungry while on our to Denver and took a chance here, knowing nothing about the restaraunt . I had the best chili relleno I have ever had. The shredded beef tacos were good too.
